This vinegar mother is from a barley brewed wormwood, yarrow, sage and chamomile ale that has almost gone to vinegar. It tastes a bit like balsamic (except better), but has yet to mature enough to get the real vinegar bite.
The other crock has mango and pineapple vinegar, and the bottles are a fermentation retarded herb vinegar experiment.
