We have co-evolved with our inner community of probiotic organisms over millions of years, and when this community is out of balance, every system in the body suffers. Restoration of internal balance brings the benefits outlined above. Best of all, home fermentation is not only easy, but safe, as long as some very simple guidelines are followed. So safe in fact, that Fred Breidt (microbiologist for the USDA specialising in fermented foods) says:
“As far as I know, there has never been a documented case of food-borne illness from fermented vegetables.”
When using fermented foods to assist with the resolution of pre-existing conditions, there are a few things you will need to know, and my workshops are unique in that I have researched and compiled all the relevant information you will need to use fermented foods to help you get better safely. This is the keystone workshop – fermentation of vegetables by lactic acid bacteria, a practice that predates our written history. Here you will learn all you need to know to ferment vegetables safely and effectively in your own home. What we make will depend on what is available just prior to the workshop at Brisbane organic markets, but we will definitely make sauerkraut, and beet kvass, and a number of other ferments including traditional kimchi if either wombok or bok choy are available.
All organic ingredients are provided, and you will each receive a healthy kombucha scoby and instructions. Full advice and assistance comes in the form a pre-workshop document detailing what you will need equipment wise, a 32 page ebook outlining my own protocol for calming, healing and repopulating the gut based on the natural acquisition of bacteria by the new-born, and a 108 page ebook full of recipes and information that you will find nowhere else. You will taste fermented foods I have made (including second fermented medicinal kombucha), and all you make, you take home. Post workshop assistance and troubleshooting are also part of the service.
The workshop is 3.5 hours (bring a snack if you think you'll need it), the cost is $100 per person early bird, or $120 from the 11th of March.
